WHere is a home-style interpretation of a cocktail from the seasonal cocktail list. It's a batch prepared mix that's packed with the tastes of the Christmas time, rendering it ideal for a festive gathering. Reserve the remaining syrup you can use for brunch beverages, puddings, or to make additional servings of bikinis.
The Bikini Cocktail
Makes enough for 10 guests
To make the Clementine Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Cocktail (produces 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
Making the Syrup: Place the listed ingredients into a saucepan, bring to a light boil, agitating so the sugar melts. Next, remove from the heat allowing it to reach room temperature fully. Transfer into an sterilised bottle, close it and refrigerate it in the refrigerator, where it will keep for about a month.
Preparing the Premix: Mix all the liquids in a sizeable container, allow it to infuse for an hour, then pass it through preferably using cheesecloth, so it's completely strained.
When ready to serve: Add 85ml from the premix into your cocktail shaker containing ice, and stir carefully for a minute until cold. Filter into an cold coupe glass or similar, top with the cranberries and finish using a light spray of mandarin oil over the drink.
